Italian food, Rolandis in Plaza Caracol.
International Food, Bandstand, next to Kukulcan Plaza, very near from Le Meridien.
Yucatan cuisine, Restaurant Labná, downtown Cancun.
Try a restaurant in front of the lagoon, you will see a beautiful sunset.

There's also a REALLY great place with a wonderful ocean view next to Camino Real hotel, but I cannot for the life of me remember right now what it is called. It is super for lunch and has delicious grilled fish specials.

LaHabichuela in the GARDEN for certain. Laguna Grill on the Lagoon. LaMadonna at LaIsla just for the decor alone, although we have had good food there. Pat O'Briens Jumbalaya and Creole is underrated I think also. I think La Brisa is the restaurant next to Camino Real (now Dreams) that the earlier poster was refering to. It is a great place for lunch!
