Have you ever thought of staying at a furnished apartment?
If you are travelling by car staying in W. for more than three nights these offer excellent self-serviced accommodation at a fraction of the price of four-star hotels like the Dorint, plus the chance to interact with some real Germans. With luck you can find one on a vineyard property and get to sample their wines at the same time.
Give me some feedback and I will make some recommendations.

If you're willing to stay 30-45 minutes out of town: Two years ago we stayed at a great pension near Lauda, and drove to Wurzburg on a day trip, parking in a large car park on the northeast side. Walked from there to the castle, capella, and downtown. the inn is near Lauda, maybe 20 miles north of Bad Mergentheim. They are wonderful gourmet chefs (wildschwein, and other delicacies). Their website is only in German, although thw owner & his son-in-law speak English.
