Will provence still have lavender or sunflowers by August?
Or will it be too late?... still worth going in Aug or better to go another time in June/July? This year we're not free until Aug...

I think there will be some at the beginning of August. They have a lavender festival in Sault, and area known for lavender, and I don't think that's until mid-August. I think that's becuase its climate is a little different than Provence (it is the Vaucluse and on an elevated plateau). see

I've always wanted to spend time around there. I don't know if that's in English, I didn't check but it says <<Aujourd'hui la lavande est encore coupée à la main pour son utilisation en bouquets séchés alors que la récolte, du 15 juillet au 15 août, des fleurs destinées à la distillation s'effectue de façon très mécanisée.>>
which means roughly -- today, lavender is still cut by hand for its use in dried bouquets while the harvest, from the 15th july to the 15th august, of the flowers meant for distillation is done in a very mechanized fashion.
So it probably depends on the weather that year whether it is more towards mid-July or mid-August that they do the harvest. I don't know about sunflowers, it seems to me when I've been there in mid-July that a lot of them were still small or at least not fully grown yet.
But if you can only go in August, the sooner in August, the better.

There's also a lavender garden there where you see the various collections of Lavender. it's free from 10am to1pm and from 2pm to 7pm.
Simiane-La-Rotonde is the true lavender capital
and you can see a panoramic view of the lavender fields.
Lavandin is a hybrid cultivated on the Valensole plateau and the Digne area.
You can see them in blue expanses from the road between the village of Valensole and the Puimoissen.
One year we saw them havesting in September.
Valensole's lavender festival is July 20, and in

August. The Haute Alpes is true lavender.
