I was going to suggest the very same hotel! Really close to Nice. Took some figuring out how to get down to it with a car, but it's one of the most memorable places we've ever stayed. Ask for a corner room with a balcony on each side.

Check out the replies to jacandy's posting on Oct 17, French Riviera Honeymoon. This might give you some ideas.

I think that you can not receive good advices if you do not give more details:

Do you have a car?
What do you want to do during this trip?
How much do you want to pay for a hotel room?
Are your flights to / from Nice?

Agree that what you want to do/see and how long you have is key. In winter I would stay in Nice - which has a lot to see/do and then use a car to visit the small mountain towns and see other museums and such. Not much point in being near the beach in January.
