Just FYI, the Palais de Tokyo is directly across from the Musee Galieri so if you go there, you can always hit up the Palais de Tokyo as well. It's also open until midnight every day but Tuesday so it's a nice after dinner activity.
I second the Musee Jacquemart-Andre. It's a gorgeous building.
Also second riding around the Bois de Vincennes or renting a boat and going out on the water. I rode around it once and it was so beautiful and fun, just beware the bikes don't leave permanent stains on your jeans.
If you've never been to the Parthenon, definitely go. It's my favourite sight in Paris and it's just up the street from the Luxembourg Gardens.

A few things that were previously on the list were removed either due to $$ or because they weren't open. Also, I'm writing down lots of the food suggestions from this thread to take with us during the day. It's a busy itinerary, but we are all very type A who like goals for each day, even if they aren't all achieved. Finally, we'll be getting up early several days to go take sunrise/pre-tourist/pre-pedestrian filled photos
