Three Days in Provence

We will be in Nice for a conference in November but then have three days afterward to see a bit of Provence. We have been around Nice before so want to venture west. What city/town/village should we use as a base? It is ok if we have to drive a few hours from Nice. What are the 3 or 4 must sees. We love art, history and wine but not necessarily in that order. Great hotel and restaurant ideas would help a lot too. About 200 or so euro per night would work very well.

Would Riboto deTavern in Les Baux be a great place to base ourselves or is it too far west? What would be the best and most central location. Or is this place worth the extra drive time?

from Nice, Les Baux is about 2.5 to 3 hours by car. It's also centrally located for visiting places like St. Rémy with the ruins of Glanum, as well as the Pont du Gard (for your history). There are some excellent restaurants within a twenty minute drive of La Riboto, not to mention their food is excellent. La Riboto is a good choice of hotel, as the rooms are very comfortable and you have a great view of Les Baux itself from the property.

Châteauneuf du Pape is about a 45 minute drive - you can get your wine tasting done while meandering through the vineyards. There are also a couple of quite good vineyards at the foot of Les Baux.

I know you said that you wanted to go west but what about east and hit Menton (the lemon capital of France) a great small town on the water. We fell in love with it.
