I concur that Montreux and Vevey are favorite towns on Lake Geneva. What is your budget for hotels? There is a nice 4-star just across the street from the train station in Montreux called the Suisse Majestic; if you can afford it, it would be a good stop. One side of the building faces the lake, so I would get a room on that side. Otherwise, most hotels are down at the lake, about 10-15 minute walk from the train station. You can always take a taxi upon arrival --
I don't know hotels in Vevey as I do in Montreux, but you may want to look at the Hostellerie Bon Rivage. It's just across the street from the lake at the edge of Vevey (suburb called La Tour-de-Peilz), so it's quiet with outstanding views. It's a 3-star. It would be about a 15 minute walk from the train station, but it's all level. Or, again, you could take a taxi.
There are lots of hotels in the city of Luzern (or Lucerne but not Luzerne, just FYI for googling, etc). Again, it would be helpful to know your budget.
Lauterbrunnen is a town in the valley near the peaks of the Jungfraujoch and the Schilthorn. Lots of folks on this board like its location because it's central for excursions up both sides of the valley. However, it sits at the base of some cliffs, and that always depresses me when I go through on the train. I far prefer staying in a village up ON the mountain like Wengen or Mürren. These are car-free villages, so they have a really special atmosphere. But don't worry -- most hotels will collect you and your bags with an electric cart when you come in by train. Finally, we would love to get to Neuschwanstein and other day trips from Munich - again, kfusto - are the day trips you recommend not too strenuous walking?

St. Gilgen by bus (45 minutes) and then ferry to St. Wolfgang. Walking is not an issue as we had my mom with us last time and she was 76 and used a cane and did well. We did bypass some of the more uphill streets in deference to her but there was plenty to see.
Berchtesgaden by bus is about 45 minutes. Moderate walking.
Lake Koernigsee is where we did the most walking as taxis are not readily available from the bus stop and the walk to the boats was about 2-3 km.
From Munich, Garmisch is 2 hours by train and the walking quite easy. Mittenwald is another 20 minutes farther by same train.
Prien am Chiemsee is about an hour from Munich and easily walkable. You can take the boat to Herrenchiemsee and visit the castle there. I would say that is moderate as well.
Regensburg is an hour from Munich by train. It is a larger city so taxis would be easy if you grew tired of walking.
