I don't recall any closures of major tourist sites on Sunday in Athens.
Monday might be a different story, at least for museums.

On our trip to Greece, we spent 2 Sundays in Athens and had no problems getting into any of the sites. But as P_M alludes to, double check hours before you go. Some guidebooks aren't terribly reliable on this point.

All the major sites are open on Sundays no worries...however some of the museums hours such as the Archaeological Museum and the Benaki Museum may close earlier than they would on the weekdays, but that's the case for most museums on the weekends...nothing to fret over though. Also, I believe admission to the Acropolis is FREE on Sundays....so that's actually a big plus.

Admission to the Acropolis and the 5 other Ancient Sites on the Ancient Site Ticket list (12Euros) is Free on Sundays as follows:
EVERY Sunday, Nov. thru March
FIRST SUNDAY of each month -- April, May & October (If the first sunday falls on a National holiday (which is ALSO a free day), then the 2nd SUnday is the free Sunday...
