I try to assess these things as "upside/downside" risks. I think you have a 50:50 upside/downside risk of + or - $100 in the next 30 days. And maybe a 20:80 risk of + or - $200, running, say... over the next 60 days.
Perhaps the most important word in your question is "good" - - as in good itinerary. Cheaper fares may come along - - will they strike you as a good, or better itinerary? Only you know your definition of good.
One-stop service between Charleston and Malaga is surely not ever going to be possible.

Yes, I know I'll end up with at least two stops no matter what. I fear I may end up with three if I wait. I'm travelling with an 8 year old and 2 seniors. So the less hassle the better. This itinerary is "good" because the stops are all less than 3 hours, in both directions.
To me $100 each isn't worth an extra stop, or a 12 hour wait in London. Proably better to book and save myself the headaches later.

If you have an itinerary that works at a reasonable price, take it, especially if the itinerary is more important than $100 pp.
Don't look at airfares again.

I followed that cheaper fare through on Mobissimo, and it was with CheapTickets.com . But you can't actually book the fare, which is a common problem with these search engines. EBookers has a cheaper fare with US Airways, which you said you didn't want. So you may indeed have the cheapest fare possible (but one can never know for sure). If you are willing to wait another day for advice, I'd post on the Cheap Flights forum at http://www.eurotrip.com/forum .
