Pal’s Route is a big detour but you could go that way and then drop down through Zaharia.
Benefits - you see Seville, downside the least interesting route.
Depends how much time you have :
Two other options
1.Medina Sedonia / Ubrique / Grazalema
Benefits : stunning combinations of old farming / sherry communities and then up into high, mountainous passes.
Down sides - torturous roads going 3 steps forwards and 2 back.
2. Along the coast
Conil / Zaharia / Barbate / Bolonia (ruins) / Tarifa / Gibraltar then turn left at Marbella
Benfits : stunning coasts and food all the way down to Tarifa. Gibraltar is very odd but interesting
Down sides : after Gibraltar you enter a godless, tasteless stretch of the most destroyed coastline Europe has to offer. Bit like Myrtle Beach in a bad day.

And filled with Brits and non-Spanish tourists - spent a week in Taormina once as a chaperone for high school class trip - rather boring
