On the classical "Ruta" we have only visited Arcos de la Frontera, Villamartn, Ronda and Casares of which Casares and Arcos were our favourites.
Further south (in the direction of Marbella) there are a few very small villages: Ojn, Con, Monda, ... which we also liked very much.
The most beautiful however was Frigiliana, east of Malaga up in the hills above Nerja.

JandaO,
Myriam has given you fine suggestions. I would just add immaculate little Grazalema and Zahara de la Sierra. The drive between the 2 through the Puerto de las Palomas pass is spectacular (we're doing it next week) but only for the adventurous (very serpentine). Also I'd try to stop at the prehistoric Pileta caves, up from Casares and Gaucin and just south of Benaojan. Before revisiting the caves next week ourselves, we're stopping for lunch in tiny Benalauria at the Meson de la Molienda, a rec from a Fodorite that I'm very eager to try.

Don't forget Ronda is fabulous.
I made that route last January.
I stayed in the Parador of Arcos. Very good location, beautiful views but the restaurant wasn't so good.
But you received very good suggestions from the other two fodorites

Would I go again? Yes, yes and yes again. I particularly enjoyed walks from Grazalema and Zahara but the vultures' nesting season may restrict you on the latter.
