There is no one answer for this. Some will say a month is not enough time and others will say that 5 days is plenty.
My personal opinion is that 10 days is ideal for a Rome visit, especially if you are sure you won't be returning.
Pisa and Pompei are both possible as a day trip, but there are other, worthwhile options that are much closer and would be much easier on you and your family.

YOu could also spend a day exploring the Appian way. Easy to do on the Archeobus http://tinyurl.com/vu37p

The wifey and I are doing it similar, from the 24th through the 28th in Rome, then on to Sicily.
From what I've found, just about all of the places that require an "entrance" are closed on the 25th. It also seems that most restaurants are also closed and public transportation is curtailed.
However, we're planning on just roaming around the city by either bus or car. If the traffic is light, I'll drive, otherwise, take buses when we can find one or walk. There are so many "public" things to see and do, we found that we simply don't have the time to see it all. Fountains, plazas, Spanish Steps, Aventine, etc.
It seems most stuff is open on the 24th and 26th. I haven't gotten a complete confirmation on the Vatican Museums being open on the 26th, but according to their site, they are. Officially closed on the 24 & 25.
