Restaurant recommendations for Umbria

Hi all. I'm looking for a few good trattorias or enotecas in Todi, Montefalco, Bevagna, Spello and Assisi. We will be stopping for lunch in Todi on the way to Bevagna from Orvieto, and we are staying in Bevagna. We plan to drive to the some of the villages for aperitivi and dinner, eg Montefalco. I heard on a podcast (Kimberly's Italy) about a place seemingly out in the middle of nowhere with a terrazza overlooking the rolling hills where they stopped for a drink but she never divulges any details! If anyone knows of any place along the scenic country roads to look out for, that would be great too.

In Montefalco, Il Ristorante Coccorone is by far the best. We ate lunch there but had a full coarse meal. If in-season, the tartufo is a must. In Assisi, Le Terrazze di Properzio has wonderful food and spectacular views of the valley. Be sure to go in the evening to enjoy the sunset.
