Add Piran in Slovenia to the list. Piran is a lovely, old world town with brightly colored buildings, a fine square and a view of Trieste across the water.

On our most recent trip we were particularly taken with Gordes, Vence, a lovely walled town and Roussillon with its ochre buildings all in the south of France.

As soon as I saw the title I thought of Rothenburg ob der Tauber, but the only way to see it is to spend the night. During the day there are just too many tourists. Wandering that city at night and first thing in the morning before the buses arrive, really lets the city shine.

And from your cornish list you have missed out Mevagissey, Looe, Polperro, [though I suppose we might debate whether those are towns or villages, if Port Isaac qualifies so do they] St. Ives, Penzance, Fowey, Falmouth, and St Mawes.
