Garda is absoulutely beautiful. Take a car or taxi down to Salo to to walk around and Riva if you have time.
In Desenzano, there is this old great wine bar (can't remember name, sorry!, ask around) down a cobbled alley, in an old cellar. Two guys run it. Order the risotto, to die for! They bring it out in a huge wheel of parmesan, hollowed in the center and place hot risotto in it & stir, until the parm melts and is served immediately to you. It is a very quaint, rustic romantic atmosphere. I would have to rate this as one of the best meal experiences in my life. try the seafood appetizer too.

Martin,
If you are still interested I have stayed at Hotel Marconi in Sirmione several times. It is in center of the old town . It has lakefront rooms and has more for breakfast than the picture of baker in lago di garda magazine shows. No restaurant at hotel but there are restaurnat less than 1 block away. You can smell their wares baking in afternoon for next morning. They even give you a small pianeforte for the road when check out. You have to cross bridge or moat? in order to get there. No elevator but with its own dock and the views who cares. Only about 2 blocks to boat dock and to castle. Their are very few hotels in the center of Sirmione and this is a gem. The price for lakefront double with buffet breakfast and I mean buffet is 96 euros. I almost did not post because this is our favorite hotel but since I have made my reservation for next year I can share. Police will let you in center as long as you are staying in a hotel. couple of websites that you can look and see if you are interested are:

My comment about police letting you in Sirmione is for drivers only. They will only let locals with permits and people who have hotel reservations in the center drive over bridge into old section of Sirmione, otherwise you have to park car and walk in. Anyone can walk over bridge. Sorry for confusion.
