One more place to research, Grantley Hall Hotel on the edge of the Dales and just up the road from the World Heritage Site of Fountains Abbey and Studley Royal Water Garden.

I've been there for afternoon tea and also for a 'behind the scenes' tour - it's stunning!

Oh dear.... I gave you a bum steer. Earlier I had mentioned Lincoln as being north of York. Actually, it's about an hour south of York... about 2 hours east of Manchester. My memory, or sense of direction, or both seem to be deteriorating.
Anyhow, it's fun reading about all these lovely places to dine and stay.

I just assumed you were talking about Durham and not Lincoln. Durham also has a superb cathedral . . . and IS north of York on the way to Scotland. (Both cities are actually about 90+ minuted from York)
