This would be moving much too fast for me - for major cities like Prague and Budapest I would want at least 4 nights (3 days). Seems like an awful lot of time spent getting places versus the time spent AT places and doing things.

The town on the southern tip of Croatia is Dubrovnik. And it's not easy to get to if you're not flying.
That Balkan run is a b-tch - new location just about every day. And what happens on the 19th?
Why 3 nights Zakopane and same for Krakow and Prague, which are far larger?

It is potentially do-able if you have a car. If you are thinking of using public transportation, it will be much more of a challenge. Even if it is do-able, I'm not sure it makes sense, since you are would have so very little time to actually see any of these places.

I can really only comment starting with Zagreb. Kja is right, you will absolutely need a car.
As for time spent in Croatia it looks like you are planning:
1 night Zagreb
2 nights Plitvice (assuming the 19th is spent there)
2 nights Dubrovnik
1 night Mostar
2 nights Split
1 night Zadar
This is totally doable. You might need to think about the side trips to Kotor and Mostar and debate if the extra driving is worth it or if the Croatian cities where you are staying would be better seen with a little extra time. Other than that I presume you know your travel preferences and like to see a lot of different places, so enjoy
My trip in June was 1 night Venice (after the flight from the US), 1 night Plitvice, 2 nights Dubrovnik, 2 nights Korcula, 1 night Zadar, 2 nights Rovinj then back to Venice. Loved it.
