If you stay near Heathrow you'll be close to the wedding as well as transportation to Gatwick, should you need it, but not central London. If you stay in central London you'll be close to some sightseeing and transportation to Gatwick, should you need it, but not the wedding. You need to choose which airport you'll leave from to make any sense of it all. The missing link.
Or stay in a place like I suggested above, be close to the wedding, Heathrow as well as transport to Gatwick and sightseeing in Windsor.

>>. . . close to Houndslow for the night of the wedding, close to central london so that I can do some sightseeing, but also easy to access traveling for in the event my flight is out of Gatwick instead of Heathrow<<
No location fulfills all of those so you need to decide which one(s) are most important to you.
>>I need to decide on a good middle ground place that's . . .<<
Middle ground could mean just about anything. What is your actual budget?

really, you need to get that flight sorted out. I also saw cheap BA flights to Dublin from LHR; id you can get one of those, it's really a no brainer to stay near there, and just put up with the trip into central london for the one day that that applies. [if you decide to go there, instead of windsor which IMO is a better idea].
and it's Hounslow - no D involved. [which may help when you are trying to locate hotels]

I think awilliams means a place in the middle/central to the activities, not price. Or not.

In reality it doesn't matter if she meant middle ground (price) or middle ground (location) - in either case we need more info. Her budget AND which geographic criteria is most important.

You guys are really amazing. I can't begin to thank you enough just from reading all these posts of feeling determined to offer me a suggestion. I bit the bullet and booked a flight using the awesome suggestion of BA (thanks for clarifying that it was British Airways and not Budget Air) and my flight will be out of Heathrow so yay!
I really don't want to be closer to the wedding that it makes traveling to see places in Central London (my husband wants to see the Churchhill War Rooms and Natural History Museum). The wedding is Saturday in the evening so I know that day is pretty shot bc we're going to have to endure jet lag during a wedding which isn't ideal but there wasn't much we could do though. That leaves really just Sunday to visit everywhere so in all actuality we might as well stay near the airport.
