To a certain extent, there is a similarity to all the islands in Croatia, yet each one that I saw ( quite a few ) had its own special flavor.
One thing that is very special in Korcula is the sword dance:

Hvar is lovely too and more lively with everything from the jet set ( or yacht set) to loads of australian backpackers & everything in between.
Both are beautiful and have interesting historical sites.
I had your same question & even wondered if I needed another island, but then decided to go ahead and do both. I am glad that I did. I really enjoyed them both, but I can not say I liked one more than the other.
I really enjoyed them both for different reasons. We did a ton of island hopping this year ( in Greece, Turkey & Croatia, so I did not need another island). Still, I am really glad that we saw both and I liked them both much better than Split ( altho the Roman palace is great there & it is a pretty harbor).
I think you will just have to read and look at pics of both and see which one resonates most to you....or do both.

If you look in my blog archives you can see my trip on both & maybe that will be useful for you. We did just a quick trip to both, but did add an extra day to Korcula.
Korcula also has the Marco Polo factor & we enjoyed his house & the ice cream.

( We spent over 45 days there last August & September)

Here's our vote: Hvar.
We did 2 weeks in Croatia last June and visited 10 towns/cities and liked Hvar much better than Korcula. Better choice of hotels, more to see. The supposed best hotel on Korcula did not even have A/C--could not wait to get out of there.

Well THE place to stay in Korcula is Villa Depola. It has been highly recommended on this site, Rick Steves and a few other places.
It is very inexpensive, fantastic location with great views and wonderful couple that is related to Marco Polo who run it.
We had wonderful air conditioning and a wonderful very large room with a very large sea view terrace.
We were less pleased with our lodging in Hvar, although it was not bad and also very cheap. We just followed one of those ladies from the ferry.
I thought there was more to see in Korcula, but the energy in Hvar seemed to be the draw card there. So if you want more hustle and bustle that would be the best choice.
Both seemed to be in off season mode when we were there in later September.

Villa Depolo in Korcula is very nice and has a great location. We didn't need AC in September at least. We loved Korcula, which had a good balance of things to do, friendly locals, and a relaxed atmosphere. We stayed four nights.
I'd agree that Hvar has more hustle and bustle. It seemed more touristy, slightly more expensive. It also has Jelsa on the other side of the island with a quiet square, harbor and lots of swimming spots. And from Jelsa you could easily go to Bol for the day.
We liked Korcula the best, but it really depends on what you're looking for.
