I'm a dubliner and I would choose the Westin or the Four Seasons, if I were you, the K Club is also very nice but its a good bit further out from the airport its in county Kildare, whereas the other two are in Dublin, my personal favourite is the Westin, I love it.

Lucielou is right K Club is miles away and too long a trip to the airport. Westin is very Central and the four seasons is lovely in Ballsbridge a short hop to the city.
A friend went to Sunday brunch recently in the westin and said it was Amazing. Buffet style with a glass of champagne and lovely food. I am hoping to splurge soon!

A taxi to Roscommon from Dublin airport would cost you fortune, you can get the shuttle bus in the airport into the city centre and then get a train to Roscommon.
The first link is the shuttlebus timetable. The second is the Train Time table. good luck.
