Day trips from Perugia by bus or train...what did you see/visit

I'm staying in Perugia for a week this July. We won't have a car and thus will sightsee by bus/train.
I've checked out the web sites for bus and train and have a rough idea of what is achievable but I am interested in hearing from others who have not had a car, what was a must see for them.
I'd like to visit some markets (love food, and we are staying in a villa, so we can cook) so any favourites would be helpful.

Kimerley - You have plenty of choice. By train I'd suggest:

Assisi
Cortona
Spoleto
Todi
- also Spello, Trevi, Lake Trasimeno ...

Florence, Rome and Orvieto are also viable with an early start.

Siena is viable by bus as there is a direct service.

Add to Steve's list: Bevagna and Montefalco, both reachable by bus from Foligno (which is an easy train ride from Perugia). Assisi can be reached by either train or bus (some prefer the bus, which takes you into Assisi proper, although it's slower than the train). Todi can also be reached by either train or bus. Also consider the beautiful town of Norcia, which is one hour by bus (lovely ride) from the Spoleto train station. Finally (although this gets you out of Umbria), you can go to both Cortona and Arezzo by train.
