In Bruges, you might try the Fevery or De Pauw. I've stayed in both in recent years and recommend them. I also have stayed in the Rembrandt Rubens many years ago, and it was good value with lots of atmosphere.
In Antwerp, I've always stayed at the Alfa De Keyser, which is very central. Although it is in the "commercial" district, it's only a short walk from the old city. It might be above your budget, but for early January, you should be able to get a good discount.

I was in Brussels last Sunday and saw a new Ibis just 2 steps from Grand Place. The outside was a modern "blend-in" attempt that worked. Didn't go inside. But you can't beat the location. [I was being a bad girl at Hotel Metropole where I got a reasonable good rate -- a girl needs a little historic luxury now and then ]

Re Antwerp: Alfa de Keyser and Alfa Theater are from the same group. Although the de Keyser may be more luxury than the Theater (both are business hotels), I would go for the Theater, if only for the location. De de Keyser is located at the Central Station which is about the least attractive neighbourhood in the city.

Thanks to all, I really appreciate all the feedback. The hotel Welcome in Brussels seemed ideal, but they only had 'executive' (read: more expensive) doubles available, so we are staying at the Royal Windsor (some big cheesy hotel in what appears to be a good location)--I found a cheap deal there. We decided to stay 3 nights in Brussels and make a daytrip to Antwerp instead of spending a night there, because I couldn't find anything under 100 euros in a good location. In Ghent we're staying at the Ibis (because it's RIGHT across from the Ghent altarpiece), and in Bruges we're staying at the hotel Cordoeanier because it appeared extremely cheap. There were other hotels in each city that I would have preferred, but they were all closed! The ones we chose should work out fine, and I will report back on them. Thanks again!

We stayed at the Hotel Jan Brito - we found the hotel using www.bruges-hotels-guide.com. It had some great deals on rooms and you could compare prices from a number of differnet providers.
