you of course need a place that features cuisine from the south.
Two that are highly rated I have info about are La Mediterranee in the 6th (place de l'Odeon) and Le Petit Nicois in the 7th. Do a Google search for details like [prices, and
good websites for food are Patricia Wells, and timeout.com

I'm not a bouillabaisseophile so I can't give you a first-hand reco, but I'm married to one, so I can give you a second-hand one!
Try Chez Janou in the 3eme. I suspect Bastide Odeon in the 6eme also serves a good bouillabaisse. Both restaurants are quite affordable.

The red Michelin has a useful index of places that serve specific items, "Le plat que vous recherchez" and lists the following under bouillabaisse:

We had bouillabaisse at La Mediterranee and didn't really think it was that great. Not bad, but nothing to write home about. Just our opinion. As I recall, the appetizer was the best part of the meal, shrimp salad with pureed eggplant.
