The Weinhaus Messerschmitt in Bamburg was very nice when we stayed there 23 years ago. Cozy, centrally located, with a great breakfast.
We also stayed one night at the Hotel am Dom. It was in a more quiet area but more average in its amenities.

In Bamberg we had a nice stay at the Alstadthotel Molitor. It is in a neighborhood of cobblestone alleyways, an easy walk from the cathedral.

We have stayed twice in Regensburg but I am still looking for a better bargain. The Hotel Weidenhof was not bad, good breakfast and a nice staff. Great location. The room was almost smaller than a very large bathroom. I am not sure how they decide to lay the place out.

We got a bargain (comparative) price on the Park Hotel Maximilian once. It was a little rich for my blood, built to emulate a baroque palace.

We made all of our reservations through the Hotel Reservation Service that allows comparative shopping and has ratings by clients who have actually stayed at the hotels.

THANKS everyone. That didn't take long. E-mailed the hotels last night and today we have reservations. We will stay at the Messerchmitt in Bamberg and Maximilian in Regensburg. We start our trip in Polling Austria visiting friends on the 5th and 6th of September. Then Regensburg on the 7th. Bamberg on the 8th. Then Tubingen at the Hotel Krone, from the 9th to the 14th visiting our granddaughter at the University. [A semester in Central Europe]Our last stop is in Munich on the 15th and 16th at the Starwood 'Meridien', using points. Thanks Again iris/dick
