Travel from Sorrento to Rome
Does this sound reasonable? ”
So, if I want to go from Sorrento to Rome:
I would take the Circumvesuviana train from Sorrento to Garibaldi (in basement of Napoli Centrale)
Then, I go upstairs and take a train from Napoli Centrale to Roma Termini (the Intercity or the Regionale???)
Can all of this trip be booked in Sorrento or do I need to purchase the second part of the journey at Napoli Centrale.
Time estimate for total trip 2 - 3 hours, cost estimate 25 Euros? Is this somewhere in the neighborhood of correct?

I'm not sure if the Circumvesuviana train station in Sorrento sells Trenitalia tickets--perhaps someone else can verify. However, I suspect you will find a travel agency in sorrento authorized to sell Trenitalia tickets.

We did this 4 years ago (going the other way) and the travel description is correct, although I thought we paid more than that for our tickets, but I may also be remembering the cost of two tickets, rather than one. I'm not sure about the ticket to Rome, since we were coming from Rome.

The price won't be that cheap unless you take a slow train. The Circumvesuviana will be a little over 3€ and an ES train to Rome will be 46€.
If you can get up early, you can catch the Curreri bus from Sorrento to Rome (6:30 am 16€ - no Sunday service) or the Marozzi bus which leaves at 6 am(17.50€), but on weekends departs at 5pm.
