Train travel between Amsterdam, Brussels, and Paris is pretty simple because there is basically one choice, Thalys. See http://www.ns.nl/en for schedules and tickets.
For an illustrated introduction to European trains see http://www.enjoy-europe.com/hte/chap17/rail.htm.
What kind of attractions are you interested in?

www.ns.nl is for domestic Dutch tickets.
For international tickets you need either www.nsinternational.nl or www.b-europe.com
The latter has no problem with US credit cards, the former sometimes struggles.
Between Amsterdam and Brussels you must choose between the hourly IC train for a fixed-price €42 which can be bought on the day, valid on any train that day, journey time 3h20, OR high-speed Thalys, journey time 1h55, fares vary from €25 in advance to €79 on the day, reservation on specific train always included.
