Train from Granada to Ronda. Spend the night. Bus from Ronda to Sevilla.

I've booked my trip! It's an open jaw ticket for 2 weeks, flying in to Madrid and out of Barcelona.

Probably should start a new thread since the logistics of my trip have completely changed.
