Yep, go to Paris and London. Fly open-jaw into Paris and out of London. Take the Eurostar from Paris to London.

I am thrilled for you! These opportunities seldom come by in one's lifetime, especially in your 30s. Pick the country: I've visited all of the ones mentioned and I would recommend either Paris or Florence/Rome, Italy. Quintessential European countries. Lots to do, within walking distance. I am tempted to recommend Ireland's countryside, but am being mindful about rental car and gas expenses. Truth be told, you will make it work. Just book the trip and make it happen - I can't imagine you'll regret it. Let us know what comes of this wonderful impromptu trip!!

I am Greek woman around your age and due to work limitations (I work in tourism industry), I always travel on winter season, anytime between November-March -uusually January to middle March. I think that as far as you know some draw backs of traveling on winter/early spring on each place, you'll be fine.
I think that Ireland is not a place someone would go for the weather, you can meet rain and wind and 4 seasons in one day even on summer months. I have visit many parts of the country and Northern Ireland on March and it was fine for me.
Something people do not always realise is that it can be very cold on Paris,maybe it has to do with humidity levels too, but last time I was there on late February a couple of years ago, I saw many visitors that had a completely different idea of local climate before coming, and they had no suitable clothing with them. Ditto for London which most people relate on their minds with rain and fog but not with low temperatures. I've never visit Spain, but judging with misunderstanding some people often have about Greece,I do not think you'll find much difference than rest of Europe in general. It is southern, it's supposed to be warmer, but that's not always the case. We get lots of cold, rain and snow here by the Med too. A lot depends on specific location, microclimate, and of course no one can predict the weather for sure. This running winter has been one of the coldest winters here in Greece and I believe in a large part of Europe. So I think weather shouldn't be a huge factor to choose among your destinations.
I know this is sort of a last minute thing and due to your situation you are not picky, but you have to have some general interests, a general idea of what you want to do and see and how you are going to spend your days... Give us a clue about those, and I think you might get more specific advice. I believe everyone here answered up to now mainly based on his/ger own interests.And it is natural, we all advise based on our own opinions and experiences. But how can we know your interests and expectations to try and fullfill those? Are you a history buff, a museum person or you are into hiking and sports or into churches or you plan to visit lots of local markets and just walk around or you are looking to take organised day trips to near by attractions or you are into shopping or what? Advice and reccomendations will be different in each case! Some pointers would help us help you!

Check out Ryanair low cost airlines, they are in my opinion efficient and very good value for money, and you can visit all the three countries you are interested in. You might be amazed at the low cost you might have to pay for the flights, especially at this time of year.
