Help Picking Late Honeymoon Destination and Resort

My wife and I are planning to take a vacation to the Caribbean or Mexico at the end of April/early May of this year...2013. We were married 2 years ago and due to work commitments weren't really able to take a honeymoon at that time.

My wife has never been out of the country.

Years ago (early 90's), I traveled to Montego Bay Jamaica, Cancun, Bahamas and several cruises...but haven't been to the Caribbean or Mexico since. So I'm sure much has changed in the last 20 years.

We are both 50, so while we enjoy having a good time, we are not all night partyers.

We are looking for the honeymoon we weren't able to have 2 years ago.

What we are looking for:
All Inclusive (we think)
Nice Beach ( we both LOVE the beach)
Nice pool
Upscale accommodations
Romantic/intimate type setting
Water activities (sailing, snorkeling, etc)
Possibility of island excursions
We will be staying 7 days, possibly a day or 2 more.

What we are NOT looking :for:
Over developed hotel/condo lined beaches with tourist traps everywhere. We live not to far from the Gulf Coast and while beautiful and fun we have our fill of hotel/condo high rises lined up and down the beach.

We have the possibility of using airline miles thru Delta to get the our destination or just booking a package with airfare included.

Any suggestions on island and areas on that island and/or properties would be greatly appreciated. It is quite overwhelming when you start to look into all the possibilities.

Oh and I should mention that we want an Adult/Couples only resort...no kids.

Look into Royal Hideaway in Mexico's Riviera Maya.
It is a laid back adults only all inclusive
resort on a great beach. Fabulous service and good food.

These are the places that come to mind for me:

Sandals Emerald Bay, Great Exuma, Bahamas: It was formerly a Four Seasons Resort, so it is very upscale. I had friends go for their honeymoon last spring & absolutely LOVED it even though they were at first thinking they did not want to go to the Bahamas...but this is an "out" island and no where near Nassau or Freeport.

Jade Mountain Resort, St. Lucia: Not sure if there is an all inclusive option but its worth checking out their website...so beautiful.

Royal Hideaway has been on my list of places I wanted to visit for a while now since I had friends describe it a few years back...have not made it yet though!

Secrets Maroma - Riviera Maya, also top on my to go list

Excellence Punta Cana-I have some very particular, sophisticated, 40 something friends who went recently for their honeymoon & they were RAVING about it...I've heard most of the "Excellence" properties are great.

Look at Sandals Whitehouse in Jamaica

VERY remote part of the island

has almost everything on your wishlist

We had our honeymoon there in 2011 - and we are 50!
