Low-Key Family Resort in the Virgin Islands
Me and my family are planning a trip next month for my son's birthday in the Virgin Islands, and we’re looking for something quiet and relaxed and not crowded or loud. Water activities are our priority (snorkeling, kayaking, paddleboarding) but we also want calm water that’s safe for kids to swim and play in.We just want peaceful mornings, soft sand, and slow island days together

Cottages by the Sea St. Croix might also fit the bill. Not fancy, but very low key, calm water, bikes, kayaks, and water toys (noodles/boogie boards/etc.). Depending on child's age might be a bit too low key, no pool very quiet.

When are you travelling, and from where?
Where you go might depend on where you can get good flight into. You can fly non-stop from many US east coast hub airports into St. Thomas and St. Croix. To get to St John you then need to take a taxi to the ferry, ferry to St. John, then taxi to your hotel.
For what you are looking for, I would recommend St Thomas or St. Croix, but not St. John. The Westin St. John is a pretty, well manicured property, but the beach/water area in that bay are at best meh... It's not your idyllic Caribbean beach by any stretch. To get to those beaches you'd take a taxi to and from the beach every day, or you can rent a car, but parking on St. John is a nightmare on a good day.
On St Thomas you chould look at places like Sapphire Beach, which I believe is mostly condos. The beach there is never crowded, gentle waves, and shallow a long ways out, with off-the beach snorkeling at your doorstep.
