To get details that you want you will have to tell people a lot more than you have i.e. when you are coming - what transport you have/using- how long are you spending in any particular place etc etc
Besides its not North Stradbroke Island you would be sand boarding - it would be Morton Island.

I'm pretty sure you can go sandboarding near Port Stephens (NSW) but whether you can get to the dunes without your own wheels I very much doubt. Maybe by bicycle (which you could hire) or take an organised tour.
Plenty to do in the general area and the various towns/townships are accessible by bus from Sydney (c. 3 hours)
I went sandboarding on Kangaroo Island and somewhere near Cape Reinga (tip of the N Island, NZ) but on both occasions I was with a group.
Don't suppose this is much help! But food for thought.

To get to North Stradbroke on public transport you could catch a train from the airport to the city and then catch another train down to Cleveland - where the Stradbroke ferries leave from. There are buses that pick up from the Cleveland station to drop you the couple of kilometres down to the ferry harbour.
Let me know if you need more information regarding this and I can see what the bus schedules are etc for you.
Hopefully, the tour company could organise a pickup from the ferry terminal on Straddie.
I see on your other post that you arrive very early so realistically, Straddie is doable as a day trip but you'll probably be pooped by the end of the day.

There is a regular bus service on Nth STradbroke Island going from Dunwich, but only places like Amity Point & Point Lookout.
I haven't heard of people sandboarding on Nth Stradbroke Island, but then it is a sand island, so they have started the sport somewhere there.
My wife & I went sandboarding on Moreton Island, when we stayed at Tangalooma Resort.

I mentioned Morton Island because it has the largest sand cliffs in the World and oe of the best things to do is sandboarding. I guess you could go sandboarding on North Straddie but why not do it at the best place - they are near each other.
