Also, I'm going shopping one day at some large shopping center that I can't remember the name of right now. Do most shopping centers have ATMs or do most banks have ATMs outside their businesses? Trying to decide how much cash to bring from home for personal spending.

The best way is to take a ferry from the Hong Kong Airport directly to Shenzhen. You're basically only transitting Hong Kong.
However, there's only a few sailings a day. So, if you might have to wait for a while.
The alternative is to take one of the coach service. After exiting baggage claim, walk towards the Airport Express trains. But before getting to the train, you'll see a ramp that slopes down to the right, leading to the buses. On the way down, you'll see some aggressive salespersons asking if you need to go to China. That's where you want to go.

You can also take a train. Its about 30 mins and it wasn't very expensive. I think it was maybe 50HKD but I could be a bit off on that. Not sure if you've been to Shenzhen before but be careful. If you take the train, be really careful coming out of the train station. Watch out for pick pockets and if you take a taxi only take the marked ones from the taxi stand. There will be lots of people asking you if you need a taxi that aren't at the taxi stand. Also, learn the chinese word for Meter so they charge you the meter rate.
