Chef-owner Pat Perry follows the philosophy of Alice Waters and her infamous Chez Panisse: Use what's fresh that day. The result is an ever-changing menu that takes advantage of Colorado's unique produce and meats, and Perry puts them together in interesting and refreshing ways, like in her pan-seared trout with sautéed apples and sweet potatoes in rum-cider sauce. And as the name implies, the outdoor patio is surrounded by elaborate gardens, and the inside dining rooms, which occupy two Victorian houses, are painted with trompe l'oeil views into gardens, as well.
