I wouldn't necessarily call it a luxury hotel. In fact, I think the Loop location is a nicer property.
As it used to be a Days Inn, the rooms (at least those I have seen) tend to be small. When I stayed there we experienced some HVAC issues--it was either boiling hot or freezing (my night went like this: Wake up in a sweat, take off covers. Wake up freezing, put on covers. Repeat).
Location is nice but off the beaten path from most activities.
For the money, I think there are better choices.

What is your budget? How many in your party? When are you planning to be here? What sort of amenities do you want? What areas are you planning to visit?
There are several large conventions and events over the next few months, so hotel rates will vary a great dealending on the demand. In addition, some hotels are closer to public transportation, shopping, tourist activities, theatres, etc.
If you provide some details, posters can give you better responses.

There are two of us, me and my husband, I'd like to spend between $200 and $350. We'll be there late Aug. I'd like very comfy beds, a workout room, great service, a convenient location to a wedding we are goint to that weekend (I don't know the wedding location but people were advised to stay at the Sheraton at 301 N. Water St. and there will be some wedding events at Jake Melnick's Corner Tap just off Michigan Ave.) We were hoping not to rent a car. Will cabs and/or public transportation be accessible?

It would help your planning if you knew where the wedding was being held, but Chicago is a very easy place to get around and use public transportation--don't rent a car, parking rates are high. My guess is you could stay anywhere in the Loop or Michigan Avenue area and be in a good location for your visit.
You don't mention the dates you will be in Chicago but weekend rates vary greatly depending on conventions, special events etc. This weekend, June 23rd, for example, is an expensive weekend--I don't know exactly what is going on. The weekend I am going to Chicago, July 13th, the hotel prices are more moderate. I am paying $89/nt at the Embassy Suites Lakefront, booked on Hotwire. This is not the luxury hotel you are looking for, but you can get 4* hotels on Hotwire and Priceline.

There are several other hotels within a couple blocks of the Sheraton. The Swissotel is just across the river and consistently gets high marks.
The Intercontinental and Conrad are about 3 blocks west of the Sheraton on Michigan Avenue.
Other possibilities in that immediate vicinity are the Hyatt Regency, Allerton, Hard Rock Hotel and Fairmont.
The last three weekends in August will be pretty busy. Aug 18-19 is the Air and Water Show along the lakefront. The following weekend is the Latin Music Fest and thw Jazz Fest begins Aug 30, so hotels will be packed.
As the previous post said, you may try one of the bidding sites if you don't mind not knowing the name of the hotel until you've paid.
A car is more of a hinderance than a help if you'll be staying in the central city. Parking at most hotels is around $40 per day.
A cab from either airport would run about $30-$40. If you opt for the train, it would take about 45-60 mins and cost $2 per person.
The Orange Line runs from Midway to the Loop and the Blue Line runs to O'Hare. You can purchase visitor passes at either airport that allow unlimited rides for a 24-hour period. A 1-day pass is $5, 2-day is $9 and 3-day is $12. Just follow the signs from baggage claim that say CTA Trains to City.
Most hotels are only a couple blocks from one of the train stations. If you'll have lots of luggage, take either train to Clark/Lake (it has elevators) and catch a cab the last few blocks for less than $10. You can get maps and complete transit info at www.transitchicago.com

The Intercontinental is a great option, especially if you can get a room in the older wing--my girlfriend had a FABULOUS room there. The pool (indoor) area is amazing.
Also, the Sofitel is about 3 blocks from Melnick's and is pretty cool.
Without knowing where the wedding is, that's the best I can offer.
