We will be driving this summer from Nevada to Vancouver, via Zion National Park, Salt Lake City and on to Idaho and then Washington State. We are looking for attractions that will interest a pair of 7 year olds along the route.

I would travel as follows: Zion-S.L.City-Tetons-Yellowstone-Glacier N. Park and then direction Seattle and Vancouver. Greetings from Belgium Paul

That seems like a tough trip to keep 7 year olds occupied since its mostly scenery, which if I recall when my kids were young doesn't excite them much.
One thing that I can think of near Spokane, if you go that way, is Silverwood Theme and water park near Coeur d' Alene Id, which is not much if they've seen Disneyland, but a decent diverson for a day or two. Of course there are a lot of things to see in Seattle, but you have lots miles of nothing between Zion NP and Seattle.
In southern Idaho, you can see Craters of the Moon National Monument and the Shoshone Ice Caves

Always remember that 7 year olds are likely bored no matter what! But we have many memories of our camping trips with 3 youngsters. One of our "ploys" was to be disdainful of tourist traps, like the fake museums and animal displays. Fact is, a 7 years old will enjoy good scenery and historical sites but maybe remember them more fondly years later. And in our case, one of our "kids" will remind us of how we gyped them, like hurrying to get through Colorado Nat'l Monument and Black Gunnison so we could reach our camping destination.
