Total of 15 days includes travel time, the day you depart from home or the day you arrive in Europe? Does that mean 12 days "on the ground" in Europe?
Where do you plan to go in Germany?
Where in Switzerland?
Where in Italy?
With travel time and the baby, you will probably need to cut one or more places.
Consider renting apartments with a small kitchen, easier with baby.
Lay out your trip day by day (including travel time and do not list any days as being in two places) or lay trip out by nights in each place. Allow time for packing up baby, time getting from hotel/apartment to train station or airport, train or plane time, time getting from train station/airport to next hotel or apartment.
Day 1, arrive Amsterdam (consider jet lag, getting settled with baby). Walk, relax.
Day 2, Amsterdam
Day 3, Amsterdam, perhaps day trip
Day 4, travel to Paris by train, 1/2 day Paris
Day 5, Paris
Day 6, Paris
Day 7, Paris
Day 8, travel to someplace in Germany?
Day 9, Germany?
Day 10, Germany?
Day 11, travel to Switzerland?
Day 12, etc.

Just realized, you should post this on the Europe forum for more responses. Also, it is not a trip report, so remove the little icon. Don't want people overlooking it because they think you already took the trip.

Welcome to Fodors zarah. I like your enthusiasm
See the 'Change forum' pull down menu? Click that and you can move over to the Europe board.
I am afraid you have too many places in too few days -- but post over on Europe and you will get lots of help.
