I spent quite a bit of time trying to research this on google but found nothing that suited our needs (not right locations). We would like to stay in a castle near Fussen or Ettal or maybe Stuttgart (going there too). Does anyone know of any castle hotels in those areas?

Aside from Schloss Elmau, which hosted also the G7 summit in 2015, and which is very, very expensive I would not know of any in the region you plan to visit in Bavaria.

Maybe an alternative: Ettal monestary also has a hotel "on site".

There was a thread three years ago about Schloss Harburg on the Romantic Road north of Augsburg between Donauwörth and Nördlingen. It's a beautiful medieval castle with hotel rooms and a restaurant. We spent a night there years ago.
