Netherlands,Belgium,Austria and South Germany
We are a family of 7 pax. (4 adults and 3 kids aged 13, 11 and 9 years ) from India.
We plan to visit Amsterdam, Brussels , Austria and Germany for 18 days, between 3rd May to 20th May 2017.
We would like to travel by train or taxis. We will not be driving ourselves as we are not comfortable with left hand driving cars and roads.
Our places of interest are Fun Kids activities , Sight seeing , Scenic beauties . Places like Windmills , Parks , Natural beauty. We will enjoy activities like cheese tour,chocolate tour , Beer factory , Shoe making , Glass blowing , clock making , Spas , Waterparks , etc. If any more of these type of actives are there , please advise. We would like to take day trips as well.
We are not interested in Historical places , Government Buildings , Museums etc.
Please advise an itinerary.

It's up to you to devise an itinerary. We are not travel agents, just volunteers who will gladly help you to refine your trip one YOU have researched it and come up with a plan.
You have listed 2 cities and 2 whole countries on your wish list. That is far too much traveling around in the short time you have (do you actually have a full 18 days on the ground?). Where in Austria and Germany do you wish to visit? Where will you fly in? Where will you fly out?
For train information, consult www.seat61.com. Familiarize yourself with each country's national railway and plan to purchase 3-6 months ahead of time for any long-distance journeys. That means starting to make reservations very soon.
For all the things you mention wanting to do, Google is your friend, as are guidebooks and maps.
Time to do your homework.

There are many opportunities in NL. You have Keukenhof, Zaanse Schans, Duinrell, for some of your preferences. Getting around by public transport is easy and cheap. Get a guidebok, e.g. Lonely Planet "Europe on a Shoestring."

Certainly I'd start by focusing on the Netherlands which is a very high density European country with lots happening and great public transport. I'd also blend that into Northern Beligum.
After that it gets tougher, maybe follow the Rhine into Germany, then the Black forest and over to Lake Constance.

Do you have flights purchased? If so, what cities? Suggest you fly into A'dam or Munich and out of the other.
Places you can reach by train (+ some bus connections...)
Near A'dam - outing to Zaanse Schans is a great suggestion. Train to Koog-Zaandijk station
St. Goar, Germany: Rheinfels Castle, self-guided tour. Ferry across the river to St. Goarshausen and take the bus shuttle to the Loreley visitor center - ride the Loreley-Bob summer sled run. River cruise: take train to Bingen and cruise back to St. Goar past vineyards, castles, wine towns.
Günzburg, Germany: Legoland amusement park
Europa-Park amusement park (near Freiburg and the Black Forest, Germany
Glass blowing at the Dorotheenhütte in Wolfach, Black Forest

Well some neat sources about trains and possible railpasses like the Benelux-Germany or Eurail Select Saver Pass (on which kids can get a free pass to match their parents - at least two of them) - www.seat61.com; www.budgeteuropetravel.com and www.ricksteves.com.
