Years ago I had a late May holiday in the Cyclades, Mykonos and Paros. Water was beautifully warm, perfectly swimmable, and air temperatures in upper 20s and lower 30s Celsius (upper 70s and lower 80s F). And very dry heat. So while it may be ok when you first arrive, it should get gradually warmer and perfect by the time you leave.

May 12, it will be brrrr ... but if in Santorini you are in a pool hotel w. lots of sunshine, pool may warm up... every day it gets better. In Naxos, the beach adjoining Naxos Town, Ag, Giorgios, is best bet for earliest days, it's shallow and warms up more quickly. Ag. Procopios 6 feet out from shore drops off to great depth so is chilliest. By 3rd week in May alls well everywhere.

16th to 21 Perrisa (Santorini) no pool
22nd to 28 Agia Anna (Naxos) pool

Remember early May 1977 and Mylopotas (Ios) it was the winds that were cool

Expect water temperatures of around 18-20C on both islands. When there is a period of hot weather and not much wind, surface water temperatures tend to warm up. It will be warm enough for sunbathing and quick dips in the sea, and for longer swims if you have a tolerance for cold water.

Swimming pool water isn't heated there, so pools aren't much warmer than the sea. I'd rather swim in the crystal clear Aegean Sea, maybe retreating to a pool on days when it is too windy for the beach.
