April Grand Cayman trip advice?

My wife and I will be staying at the Reef Resort on Grand Cayman from Apr. 19 - 25. We had several questions:
1. Where are the best places to snorkel (we are not divers).
2. Places for a good meal?
3. Any grocery stores on the Eastern Shore you'd recommend?
4. What not to miss? (We've done Stingray City already).
5. The best rental car place to use that would be near or at the airport?
6. What is the weather usually like in the second half of April?
7. Where are the best places to shop for authentic souvenirs?
8. Is the Discover charge card widely accepted? If not, what credit cards would people suggest us using?

First, please do email [email protected] for the latest and greatest advice, the team is there to help.

My own immediate thoughts :
1. For snorkelling, to start with, the snorkelling right from the shore at The Reef is great. Bring (or buy at the resort) beach shoes to give you more options around the coastline for where you enter to snorkel
2. Several restaurants in the immediate area (immediate meaning <10-20 minute drive by car... we are out in the sticks!), tons and tons of options in and around 7MB
3. There is a Fosters mini supermarket right across the street from The Reef, but I'd advise stopping at the larger Foster's store at Countryside on the way out.
4. Agree with prior poster, but also Pedro Castle, Mastic Trail, Mission House.
5. Check with the concierge at theReef
6. April weather is about perfect... right now it is GORGEOUS !
7. Market at the Grounds each Saturday morning is a great spot for this, also Pure Art Gallery in South Sound.
8. Discover not that widely accepted (much as in the US), but we do take it at theReef now

Agree not to miss the Mastic Trail (though you CAN miss the turnoff - it's very "understated"). Don't forget to bring LOTS of water..it's a good hike and can get muggy..but we had a great time!

Here's the advice I have:

1. Smith's Cove! Great snorkeling from the beach (although the entry is slightly rocky, it's worth it once in swimming).

4. Sunset Catamaran sail, drive around the island.

Have a wonderful trip! I wish I was going again, too
