Symi's historic trading halls have been restored as a delightfully atmospheric inn where centuries-old surroundings are accented by stone floors and antiques. Wrapping a luxury stay around its protected walls was an act of sheer ingenuity. One room has been crafted from an old bakery, its stone oven transformed into a clever subterranean wet-room. The recent conversion of an adjacent captain’s mansion, a historic former home of a wealthy merchant, adds lighter, airier rooms (all pastel woods and four-posters) as well as an indoor pool, while dinner and breakfast on the terrace affords one of the more memorable views on the island. Simply the most luxurious, relaxing lodgings to be found on Symi.

Built in 1928, back when Kos was under the thumb of Fascist Italy, this beautiful building was originally created as a hotel for prominent military officials. Later, it got a new lease of life as a TV studio, then stood empty for decades until it reopened in 2018 as a luxurious eight-room boutique stay with its own private beach. There's nothing else to match it on the island. The building has been sensitively updated, with its old Juliet balconies, whitewash facade, and iconic Ottoman-style pointed arches all kept. Rooms are all dark mahogany, slate gray, and gleaming white walls with murals that take their inspiration from the Art Deco movement, and sea views to melt the soul. There's no pool or gym; just history. Outside, sun beds dot the pebbly shore, which has been topped up with sand. Meanwhile, the beachside bar-restaurant adds a dash of modernity with an excellent degustation menu. It is open all year.

This elegant waterside villa, which sleeps up to 14 for exclusive usage, was taken over a few years ago by the people behind The Old Markets (carry on reading), and has been transformed into a modern spectacle that carries forward some of its past's most luxurious, sophisticated fixtures and fittings, like filigreed marble sinks and four-poster beds. Far from a home away from home, it offers a chance to live like royalty on Symi. It's a bit out of town, but that's the point. Private terraces and balconies afford solitude and fine views across the waters of Nimborio Bay, with day beds in the garden below.

Guest rooms are beautifully appointed with local antiques and art as well as built-in divans and other touches of a distinct island style. Most have sitting areas and large and supremely equipped baths, as well as sea-facing terraces. A lavish breakfast is served on a large veranda that doubles as lobby, dining room, and gathering spot, and where a member of the gracious Stergiou family is usually on hand to dispense advice about enjoying the island.

Take sea views, private and shared pools, fireplaces, hardwood floors, handsome built-ins, and all sorts of other extras, wrap them up in a boutique-style resort and, voilà. Even the location is a bit of a thrill, set away from the main town, with a nice patch of private shore on Lambi Beach and easy access to Kos Town by road or bike path. Excellent informal and formal eateries, along with poolside and beach service, make it easy to stay put—as does the in-house spa. This bit of paradise is a cut above the other noisy resorts in this corner of the island, though one reason for this is that it's for adults only.

A family passion project has turned into arguably the most beautiful small hotel on the island. Its building wraps around the ancient walls of the city; sitting within a former Knights' residence built in the year 1340 by the Red Gate (where the hotel gets its name). Inside the adults-only hotel, stone-walled rooms are decked in sumptuous antiques, rich fabrics, and plush furnishings. Husband and wife team Nikos and Angela have thought of everything: free minibar, a tablet loaded with sights and advice; an open lounge bar; a peaceful walled courtyard terrace. They may even show you their other project: the restoration of a Greek Orthodox chapel opposite the hotel, originally built by the Knights to win over locals. The breakfasts here are the best in Rhodes, which includes course after course of pastries, fruit, yogurt, and homemade jams. In the evening the family's son, Paris, a talented pianist, has also taken to serenading guests with fine jazz standards. It’s worth noting that high season for the typically older clientele here tends to be later (September and October); book far ahead as there are only six suites.

Individually styled guest rooms come with furnishings often dating back hundreds of years; they're painted in deep-hued warm colors, with Oriental rugs and rare eastern antiques (including large beds draped with translucent canopies), while all surround lush gardens. Floors are rich tile and pitch-pine; embroidered cushions beckon from low sofas; and the scent of orange blossom fills the air. One room was actually a former harem, dating back to when this was under the ownership of a prominent Ottoman official. The clientele tends to be older here, and constant: a steady stream of Italian tourists return time and again, so book far in advance.

Each room is furnished for 17th-century Lindian elegance, including raised beds, hand-carved cedar woodwork, Turkish tiles, and wall tapestries. The property’s intricate stone mosaic floors, elaborately tented seating areas and colorful tiled fountains are bathed by romantic lamplight come evening. An expatriate Symiot returned from Sydney (hence the Australian-inspired name) in the 1970s to convert the family property into a cutely colorful village-style complex of rooms and self-catering family suites. The architecture is faithful to local style, but facilities are up-to-the-minute—including a new roofed pool that opens out into its beautiful courtyard garden.

Nestled in a green corner of the New Town, Rhodes's most luxurious hotel is graced with welcoming common spaces, a tranquil landscaped pool area, and a wood-and-stone spa, and stunning suites. Although the standard accommodations are much like those in any business hotel, suites are large and handsomely furnished, with such luxurious touches as hot tubs and, from those on the upper floors, views of the walls and Old Town.

All the atmosphere of Rhodes's medieval Old Town is captured here at this charmingly restored 14th-century house. The romantically styled rooms are all enlivened by centuries-old arches and mosaic floors; suites and honeymoon rooms take that ambience and crank it into fifth gear. Excellent service, including laundry, is provided by Sotiris and Marianne Nikolis with care. Breakfast is served on the roof terrace, which affords a view of a long stretch of the city walls, and a pleasant bar and café at the end of the garden is open all day.
