Why don't many people know how to hold their fork and knife?

I always keep my fork in my left hand but then I am left handed. If you are seated to my left, we can play dueling elbows during dinner.

im lefthanded and have fork in right because i always had more strengh in left hand to i use knife in left.

Every time this thread gets revived I can't help but wonder why the original poster didn't say what she really meant, which is "why doesn't everyone do things just like I do them?"

I don't understand why many people have to switch hands when cutting their food?

Because they have been schooled in the American way of doing things. Why do you object to doing things the American way?

Truly, a thread that will not die...

I do recall being schooled (U.S.) to always put down the knife before taking a bite. Likewise, bread or anything else - eating was to be considered a single-handed event, with the other hand in the lap or on the edge of the table (never elbows or forearm).

It was considered rather greedy and poor table manners to do otherwise, as though you were scarfing your meal. Inasmuch as I went to a strict private academy for part of my upbringing, we were closely monitored to ensure we complied.

So while I do think the European style looks quite elegant, done properly, it simply goes to a cultural schooling, as htty says.

It is actually 'knife and fork' not fork and knife if one wants to be pedantic. Us Brits were under the impression that Americans ate with just a fork so they had the other hand free for their gun!
