Where should we stay in Oahu?

Many hotels in Waikiki offer 5th night free, so you may want to stay an extra night there.
You may also get better hotel and condo rates if you stay the entire 7 nights in one location, in or out of Waikiki.
www.hawaii-hotels.com lists a lot of hotels and condos on Oahu. Some of them are out of Waikiki.
Kahala Mandarin is somewhat secluded and yet only a couple of miles from Waikiki.
Also check www.vrbo.com (vacation rentals by owner) for many other choices. Kailua and Lanikai are nice areas.
Also check www.turtlebayresort.com
Also check www.turtlebaycondos.com for choices. These are condos near the hotel.
On the leeward side there is Ko'Olina Resort and Marriott Ihilani Resort and Spas.

I would also suggest the Turtle Bay. I have stayed there a few times over the years and enjoyed the location. I have not been in several years but I believe it has been renovated recently. The beach cottages are really nice for something a little more secluded. It is a nice change from Waikiki but I love it there too! It is a good base to explore the North Shore.

As far as the north shore goes the only hotel choice is turtle bay. We are going to stay at the turtle bay condos next month (not on the ocean). We were going to try Ke Ikiki Beach Bungalows that were recommended, but they were not available. All other rentals are houses, some of which are on the beach, but I don't know if they will rent for less than a week?

We stayed at the Turtle Bay condos last year. The condos are a short walk from the hotel and beach (5-10 min. depending on your condo location). The condo was basic, but spacious and clean. Our 7 nights was only about $750, which was a bargain. We enjoyed the beach there and the resort offered a great morning horseback ride along the beach - I recommend this if you have time. And don't forget to go to the legendary Matsumoto's for shave ice!
