Guided tour, or on your own? (The only thing you need a guide for probably involves a boat.)
You might think about taking a leisurely trip up Haleakala, enjoying the changing climate zones, sniffing the eucalyptus trees. Take your lunch. Explore the national park at the top, and all the spectacular views; maybe take a hike down the trail to see the amazing colors and rocks up close. If you can last until sunset, park in one of the overlooks and watch the clouds form and change, changing color with the sunset. A bit longer, and you will see one of the most amazing star shows ever.
(p.s. getting up in the middle of the night to shiver with a huddled mass of crankys to see what is often a very gray and cloudy sunrise is not, IMHO, 1/10 of the experience of an uncrowded drive up through fabulous scenery in the daylight; look out for nenes!)

I think most all tours in Hawaii are a ripoff and just created to make money for the operators.
However, I think a boat trip (snorkel cruise to Molokini, Lanai cruise, ferry to Lanai) is worth it.

You will find ratings of many Maui tours in the book Maui Revealed by Doughty. The authors live in Hawaii and have taken the tours and described and rated them in the book. The book also includes excellent restaurant recommendations.

I'm sort of glad to hear the sunrise at the top of the mountain isn't all that - I wasn't looked forward to getting up that early and be stuck with a large crowd =)
The sailing and snorkel things are certainly an area of interest.
