Thanks, guys - I've noted all your recommendations. I am really surprised by how many good restaurants are in Vegas now! I can't wait to try some of them!
If we did one swanky meal, I was curious if anyone had been to Picasso or Fleur de Lys? Both get really good reviews. If you've eaten at either of those, did you enjoy it?

Daniel Boulud's brasserie - amazing - seriously. one of the best meals I have ever had - GREAT wines.

I have not dined at Bobby Flays in Vegas but did in Bahamas and it is among my favorites.

I've been to Picasso once, and think very highly of it. In its price range, it's my favorite; the only places I like more are considerably more expensive. Picasso has a combination of excellent food, service and atmosphere. The only potential negative is that the menu is very nearly fixed. This didn't bother me, but if anyone in your party is picky about what foods they eat, it could be a problem.
Returning to your original questions about favorites:
1. Favorite restaurants: Joel Robuchon, Bar Charlie (part of Restaurant Charlie), Guy Savoy, Alex. All are ridiculously expensive, EXCEPT that the economy has caused some of them to offer much lower priced, simpler versions of their meals.
2. Favorite breakfasts: Bouchon; Tableau; The Verandah.
3. Favorite desserts (excluding those that were parts of a full meal): banana cream pie at Emeril's (if you like, you can order just dessert at the bar); almost any dessert pastry at Jean-Philippe, Payard or Lenotre patisseries. In addition to its restaurant, Bouchon has a separate kiosk where excellent dessert pastries are available.

I really enjoyed Bouchon, Thomas Keller's restaurant at the Venetian.
While it's not exactly cheap, it's not nearly as pricey as some of the other "name" restaurants mentioned already. I've only had dinner there but can't wait to go back there for breakfast or brunch on my next visit. lgott says it's good for breakfast and I've heard that brunch is great.
I also love the pastries at Le Notre at the Paris. They are so pretty to look at, it almost seems a shame to eat them. Almost.

I'm so happy someone mentioned Firefly! That was a serendipitous discovery we made a couple of years ago.
Lotus of Siam is considered one of the best Thai restaurants in the US (with arguable competition from the huge Thai ex-pat community in East Hollywood).
My Strip choices? I was very happy with my meals at Samba and Kokomo's in the Mirage. These are carnivores' dream places-- a Brazilian churrascaria (the former) and a à la carte-only steak joint with huge slabs of gorgeous meat (kind of like Harry Carey's in Chicago but with an indoor rain forest just outside your walls). Not cheap, but oh my gawd.... Oh, and Japonais in the Mirage as well. Excellent pan-Asian food and a wonderfully accommodating kitchen (they made a superb vegetarian hot-pot-- an off-menu improvisation-- for a dinner guest who was Brahman and a strict ovo-lacto-vegetarian).
Vegas has become a good-eating town; it's way beyond buffets and red-sauce Italian (but there's a good one off-Strip-- Mimmo Ferraro's on Flamingo (FULL DISCLOSURE: I'm friends with the owner's cousin, who lives near me in California). Comfortable Italian, makes you feel like family, perfect!

Reasonable meals downtown: Main Street Station, the pub and the buffet. Golden Nugget, the 24 hour cafe. Ditto on Binions Horseshoe ham and egg breakfast. Off strip the Orleans buffet and the Palms buffet. Liked dining at Paris: Mon Ami Gabi and their 24 hr. cafe.

The tasting menu at Joel Robuchon's restaurant at the MGM Grand was superb! If you're traveling with a companion, you'll have an opportunity to share a variety of exquisite cheeses and desserts. I highly recommend this dining option.

You cant beat the value of the buffet at The Excalibur.
It's the best! We had breakfast and lunch there. We tried the buffet at The Trop... sucked! I didnt care for any food
at the Downtown area.
Go to the buffet where you get your own drinks instead of being served by a waiter. You can fill up a bottle at The Excalibur and no one cares.
