Wow sounds like you have exposed your kids to a lot. What have you got against Europe? Pretty cool to show your kids a real castle, sounds like it would not be out of budget for you.
Otherwise I would explore the national parks, perhaps Quebec for European feel. Might get the kids ready for more foreign travel. Nothing like showing kids a real suit of armor, real pizza, real French Fries. Enjoy whatever you decide to do.
And are you willing to adopt an adult???

My only vacation memory is of the Aztec Hotel in Cape May. Pretty seedy, but it was on the beach and had a nice pool. Tons of kids, sand castle competitions. But what fascinated me most was putting a quarter into the soda machine and watching a Dr. Pepper roll out. Of course, we had no VCR's or cell phones back then....

We took our 6 year old to San Juan. Then crused Royal Caribbean Adventure of the Seas Southern Carib. Itin.. We had a blast. Then spent a week in St. Thomas.

My husband & i took a trip this spring to Chicago. It was incredibly clean! The whole time i kept thinking how much my kids would have enjoyed it. There is a childrens museum that is suppose to be incredible. The pier was a fun atmosphere and if you have a girl the American Girl tea room would be great.
