Also, California's beautiful Jedediah Smith Redwoods State Park is only a 20-25 mile drive away:

Brookings has been called the "banana belt" of Oregon When the wind is blowing offshore, it is getting warmed and then is channeled down the Chetco river valley.
If you have 2 consecutive days off, try driving up the coast on 101 and then return the next day.

There's a fabulous book store in Gold Beach, about 15 miles north of Brookings, called Gold Beach Books. Great selection of both new and used books as well as an incredible rare book room. Don't miss it.
Jet boat rides in Gold Beach are a lot of fun. Also, some good restaurants in GB - Spinners, Port Hole cafe, Rollin' in Dough, Double D's for breakfast and a good Mexican place on Hwy. 101. Also, Rachel's Coffee Shop inside Gold Beach Books has a nice selection of pastries and, of course, coffee.

I second the jet boat ride at Gold Beach- take the all day trip.
Are you hikers? If so there are many places to hike in the area.
Just south of Crescent City- you could go the Klamath River overlook- there is trail down to an overlook and you can frequently see whales feeding down below. Its not a long walk but a bit steep.
On the way to the overlook you will pass the Requa Inn ( an old restored inn)- might stop there for dinner- not sure if they serve lunch.
