Western North Carolina

We are visiting friends in Ashville, NC and have a couple of extra days to hike the Smokies or into Piscah forest. What should we see and where should we base to really enjoy.
Looking for great inn, small town exploring and great food and of course some hikes!
Asking for too much??

PIsgah Inn on the Blue Ridge Parkway. Look down around Brevard for a b and b. You could go up to Blowing Rock and enjoy the ambience around there--not the Smokies but fun area.
You could go Bryson City and stay at a B&B there and access the back side of GSMNP.
