When are you going? If soon, the Int'l Food and Wine Festival is going on at EPCOT and it's a blast. I don't know...if you like shows, movies etc MGM is good for that. Epcot is my favorite,however, and I would suggest spending an entire day there and schedule a dinner as well.

Definitely do the Rock & Roll Roller Coaster and Tower of Terror at MGM. Maybe it's just me, but Epcot is my least favorite. I thought Space was ok and the GM track was way overrated. I'd also suggest Space Mountain & Splash Mountain at Magic Kingdom. For Animal Kingdom definitely go on the Dinosaur ride (name escapes me). Regardless, have fun!

EPCOT is our favorite-especially the world showcase which doesn't open until 11 am so do something else first. Make sure you Fastpass Soaring-a great ride in the Land at EPCOT. Hit the Animal Kingdom for Expedition Everest for sure and do the safari ride while you're there. I know it's sacreligious but I'd skip the MK unless there is something in particular you'd like.

You don't mention when you're going, but if it's when the parks are really empty (January and February are the best), you can easily do ALL the parks in one day by spending a couple of hours at each. We do this frequently (live nearby) and if you know what you want to see and do in each park, it's a great one day experience.
