Okay probably not a real STEAKhouse but the best prime rib ever was at Lowrey's (sp?), as in the Seasoned Salt. Apparently the salt was made by the restaurant and then went into stores. Nice atmosphere (think 40's glam) and great food!

If you want to spend a decent amount of money in an environment befitting that, then Prime at Bellagio is one option. But, having eaten there about 5 times in the last four years, I'd say that my most recent experience, this past May, was a noticeable slip from the other times.
The best steak I've had in Vegas was surprisingly at the Gallagher's in NYNY. An absolutely perfect filet mignon. Surprisingly, the steak I had at their NYC original recently wasn't nearly as good.
I'll counter the Smith & Wollensky's comment. I've eaten at the NYC original many, many times. The Vegas location isn't worthy of the name. I had to send my prime rib back twice, once because it was literally uncooked.

I have done Gallaghers and Binions. While enjoyable I thought Gallaghers was too expensive for what we got food and service wise. Binions (about 3 years ago)was outstanding food and service and the view was an extra added bonus.

I failed to mention Binion's as I know it was closed for a while for "tax evasion" or some such thing. It's really a great place with good steaks and a feeling you're back in the Vegas of the 50's or 60's.
Ryan, you must have had a bad night at Wollensky's. I love the one in NYC too, but our evening was perfect at the Vegas location.

We went Binion's after the re-opening (hadn't been before so can't compare) ... excellent steak & great atmosphere. Light show on Freemont Street and checking out the downtown casinos was also fun so the short trip downtown was well worth it.
